The first tastes of the new harvest are savoured from the fragrance of “PRINCIPE Vino Novello Colli d'Imola D.O.C.” It owes its originality to grapes scrupulously picked from gracious grape vines of which SANGIOVESE, CABERNET SAUVIGNON, BARBERA. Obtained from a carbonic crushing technique: where entire bunches, perfectly ripe and intact are put into stainless steel tubs in an environment saturated with carbonic anhydride. To extract the delicate aromatic substances from the skin intracellular fermentation is carried out at room temperature. After a few days the grapes are softly pressed and the must is left to ferment at controlled temperatures then separated from the sediments and left to settle in stainless steel tubs for a short period of time, then ready to be bottled and then off to the market place. A wine with carbonic characteristics, bright ruby red, with sparkle and verve, fresh, gracefully smooth and balanced, intensified with light dishes and good company.
A young wine that is sold a month after its harvesting period.
