This is the Dalfiume family philosophy, the name carried for 3 three generations and still bleeding. Purchasing “Villa Poggiolo”, the best move we ever made, 80 hectares of land turned into cultivated vineyards on the hills of “Castel San Pietro Terme”
The attentive selection of generic grapes is owed to the ideal conditions, exceptional microclimate that allows us to produce and bottle extraordinary wine. The name of origin rigorously controlled.
All Villa Poggiolo’s agronomic functions are all carried out according to Reg. 1257/99, a law that limits the use of chemicals in quantity and type therefore introducing nutritive chemical elements to nourish and cure the soil. Notwithstanding climatic conditions our aim is to obtain a natural product.
The Dalfiume family live by two codes, the cultivation of the vineyards and wine preparation: by way of research and technology the quality (still maintaining its original characteristics) of our wine has increased two fold.
The right harvesting period according to the maturing index, individual gathering stages in order to obtain distinctive and different varieties from the harvest, immediately after the grapes are put into a hydraulic press for the soft compressing phase and before the fermentation phase we remove all the left over’s. Temperature control is computerized and enologists oversee the whole operation using the correct catalysts to obtain the close to perfect wine fermentation.
For the ageing process the wine is put into oak barrels and then into isotherm steel tanks for the conservation process then off to the bottling plant to be bottled.
The art of good wine-making derives from taste, understanding, aroma, and distinctive odours.
